A classic cup profile for coffee from Nariño. The seeds are quite hard and dense, encouraging us to be quite aggressive with heat in the roaster. This roasting strategy manifests itself in the flavor as dark chocolate covered cherries. The cup is well-rounded with a citrus acidity, often resembling tangerines.
